Growing up in a Caribbean household, “Pepper Sauce” went in everything we ate. If you had a Grilled Cheese Sandwich, it had Pepper Sauce.. Rice? Pepper Sauce! Hot Dog? Pepper Sauce. That was the only condiment we knew. What the heck is Ketchup?!?! So naturally from a very early age, the spices and hot flavors of my Guyanese heritage was embedded in me. I watched my mother and my aunt joke and laugh around our dining room table as they blended together all these amazing flavors that would eventually burn out our taste buds. So it was a natural transition that as I grew up and started developing my own blends and flavors, my kids had to suffer the way I did. But they understood the role spices played into their culture.
